June 11, 2007, 5:55 p.m.I cannot agree more with the article. However, one important comment - most of the health benefits of cider disappear after pasteurization. Unfortunately, there is mostly pasteurized cider even in health food stores. Therefore, if you want to truly boost your health by drinking apple cider, make it yourself at home, allow the lacto-fermentation process to happen, and don't heat the drink.
