  Southern Food is a pretty broad category.
  
  What are they looking for?
  
  Soul Food, Cajun, French, American Country ? Grilled Everything?
  
  What do they want to eat?
  
  A properly grilled whole Vidalia onion is as good as it gets

      Cut off the ends and peel.
      
      Rub the onion with real butter and a healthy dose of pepper.
      
      I would recommend a dash of sea salt if your diet allows it.
      
      Wrap it over an extra dollop of butter with aluminum foil from the bottom up. It should look like a bud about to bloom. This will provide a base for it to steam.
      
      It's done when a dinner fork will easily pierce the middle.
      
      The most amazing vegetable heart I have ever tasted...it's wonderful.
      
      Don't over steam it...it will be a mess and too much like regular sauteed onions.
      
      Should be a clean little cockleshell of well steamed but crisp onion heart in the middle.
