A major factor leading to high blood cholesterol level is carbohydrate consumption. Several studies hae shown that a high carbohydrate diet will raise cholesterol more than will a high fat diet.

The reason for this is likely related to the increase in insulin that occurs after consuming a high carbohydrate meal. The increased insulin greatly stimulates production of cholesterol by the liver.
